Avocado Chocolate Pudding!

Clean eating is not about limiting your food options. You are still able to enjoy delicious food, you just have to modify the way you make them! Everyday I learn new ways to make old favorites in new ways that are much healthier and more beneficial to my lifestyle. 

Last night was family dinner night at my parents house. Mom made all of the food, so it was only fair that I contribute in my own way. I wanted to make something sweet, but in a healthy way, of course! Dessert was on my mind so I had to find a way to satisfy my sweet tooth before it got the best of me.

Avocado chocolate pudding. I know what you are probably thinking, just wait. Avocados are not only super amazing for you and should be incorporated in your everyday eating, but they are so versatile! You can make way more out of them then you probably ever thought, like pudding! The creamy texture mimics the same texture of your standard pudding and with a little work you can easily modify the flavor. Not only did it turn out delicious, but it was seriously so easy to make. 

Here is what you need:


- 2 ripe avocados (I used 3 because mine were on the small side)
- 2 tablespoons coconut oil
- 1/2 cup cacao powder
- 2 teaspoons vanilla extract 
- 1/2 to 1 cup nondairy milk (coconut or almond) 
- 3 dates soaked in hot water for about 15 minutes and chopped 
- 1/3 cup sweetener of your choice (agave, honey, or maple syrup) 

Don't forget the toppings!
- Raspberries
- Bananas
- Nuts
- Coconut
- Sea Salt
- Or like I used last night lite Cool Whip ;) 

Assemble!
1. Turn appliance on low and put all of the ingredients into your blender or food processor in this order: dates, honey, vanilla, 1/2 of your non dairy milk, avocados, and cacao powder.

2. Turn it up to medium or high depending on your appliance and let it smooth itself out. Continue adding the milk to thin it out and don't be scared to add extra because it will firm up once you place it into the refrigerator. 

3. Once blended you can either portion the pudding out into ramekins and refrigerate, or do like I did and throw it all into a bowl and chill it for a couple hours before serving! 


The awesome thing about this recipe is you can adjust it as you go. You can add more cacao if you are looking for a more chocolaty pudding, or more sweetener if its not sweet enough for you. Next time I will be adding some Sunbutter to the mix and see how that goes. 

I know I considered this "dessert" but this could also be a guilt-free snack any time of the day! As mentioned before, avocados are so rich in vitamins and healthy fats that whether it be chopped up in a salad, or a sweeter version, you should try to incorporate this super food into your every day eating!

  1. Finally! I make this all the time with just banana, cocoa and avocado and it never blends well. I'm excited to try this out :)
